Healthy Pumpkin Cookies


Fall is approaching fast. The leaves will begin to change soon, and that means sweater weather officially begins!! If you are anything like me, the first thing that comes to mind when you hear fall is pumpkins. Pumpkin flavored foods are easily the best part of the season; I mean, what tops Pumpkin Spice Latte?! Pumpkin flavored sweets, while delicious, can easily turn into some of the most unhealthy foods of the season due to added sugar and sweeteners. However, there are plenty of healthy pumpkin snacks that you can make right from your home! One of these options is the pumpkin oatmeal cookie. YUM! Here’s what you’ll need: 3 cups of quick cooking oats, 1 ½ cups of pumpkin, ½ cup of sugar, 1 ½ teaspoon of cinnamon, 1 teaspoon of ginger, ½ teaspoon of nutmeg, ¼ teaspoon of cloves, ¼ teaspoon of allspice, 1 teaspoon of vanilla extract, 1 cup of raisins. Then just mix it all together. Then form the dough into balls and cook on 350 for about 15 minutes. When the cookies start browning on the bottom, you’ll know that they are done cooking. This is the perfect treat to take to a fall bonfire or just to have in your bag when you need a snack after class! It’s a super simple, guilt free fall recipe!!
